This Week’s Meal Plan – Week of November 16, 2025

Dinner

  • Sunday – Korean Beef & Broccoli – I cooked extra white rice and extra ground beef (and seasoned it with just salt and pepper) to use on rice bowls for lunch throughout the week.
  • Monday – Honey Garlic Skillet Chicken (serve with white rice and airfryer broccoli)
  • Tuesday – Ina Garten Bolognese – I use canned coconut cream instead of heavy cream and omit parm for dairy free
  • Wednesday – Community Group Meal
  • Thursday – Turkey Kale Soup – This makes great leftovers for lunch over the weekend
  • Friday – takeout!

Lunches –

  • rice bowls with ground beef, air fryer sweet potatoes and leftover broccoli
  • leftover turkey kale soup
  • Simple green salad with air fryer salmon (I season with salt, pepper, and paprika and drizzle with olive oil and cook until 135 internal temp! Maybe 7-9 min depending on thickness. If it’s frozen, I flip halfway through.)
