This Week’s Meal Plan – Week of November 16, 2025
Dinner
Sunday – Korean Beef & Broccoli – I cooked extra white rice and extra ground beef (and seasoned it with just salt and pepper) to use on rice bowls for lunch throughout the week.
Tuesday – Ina Garten Bolognese – I use canned coconut cream instead of heavy cream and omit parm for dairy free
Wednesday – Community Group Meal
Thursday – Turkey Kale Soup – This makes great leftovers for lunch over the weekend
Friday – takeout!
Lunches –
rice bowls with ground beef, air fryer sweet potatoes and leftover broccoli

Simple green salad with air fryer salmon (I season with salt, pepper, and paprika and drizzle with olive oil and cook until 135 internal temp! Maybe 7-9 min depending on thickness. If it’s frozen, I flip halfway through.)
