This Week’s Meal Plan

The name of our dinner game is fast and simple! My boys are picky, and I don’t like to make entirely different meals for them, so I always try to make something that I know they’ll eat at least one part of (even if it’s just the rice or potoates) and then add other easy stuff to their plates.

Week of Feb 1

SundayTeriyaki Chicken with white rice

  • Super easy and we use whatever veggies we have on hand from the previous week. I saute them before I saute the chicken and then set them aside, before mixing it all together at the end.

Monday – Grilled chicken with air fryer sweet potatoes and simple salad (greens from the garden, carrots and cucumber).

TuesdayKorean Beef & Broccoli 

  • I’ll cook extra white rice and extra ground beef (and seasoned it with just salt and pepper) to use on rice bowls for lunch throughout the week.
  • Both boys will crush the rice and Charles will eat the broccoli and maybe the beef. Thomas will eat a cheesestick + cucumber with his rice.

Wednesday – Community Group dinner.

ThursdayWhite Chicken Chili

  • I’ll make cornbread to go with this since I know the boys will eat that! I recently started making it with a little less sugar than it calls for + gluten-free all-purpose flour. Turns out great!

FridayIna Garten bolognese or maybe takeout

  • I use coconut cream instead of heavy cream since I don’t tolerate dairy. Buy canned coconut milk and use just the top thick part if you can’t find coconut cream.
  • The boys eat the plain pasta + a cheese stick and mini cucumbers.

Week of Jan 18

SundayPerfect pot roast

Monday: Grilled balsamic chicken + white rice & broccolini (375°, drizzled in olive oil, salt & pepper).

  • Charles will eat all of this, but Thomas will only eat the rice, so I serve a different protein for him – usually a plain burger that we grill alongside the chicken or a spoonful of peanut butter. We always grill extra chicken and make extra rice & roasted veggies to use on salads or rice bowls for lunch. 

TuesdayHoney Garlic Skillet Chicken with white rice + sauteed broccoli.

Wednesday – Community Group dinner

ThursdayBest ever burgers with sweet potato fries in the air fryer

Friday – takeout


Week of Jan 12

Tuesday: Weeknight Bolognese

Wednesday: Pick up dinner for our church Community Group. We eat dinner together and then discuss the week’s sermon.

Thursday: White chicken chili + cornbread

Friday: takeout or tacos if I’m feeling ambitious
