The name of our dinner game is fast and simple! My boys are picky, and I don’t like to make entirely different meals for them, so I always try to make something that I know they’ll eat at least one part of (even if it’s just the rice or potoates) and then add other easy stuff to their plates.
Super easy and we use whatever veggies we have on hand from the previous week. I saute them before I saute the chicken and then set them aside, before mixing it all together at the end.
Monday – Grilled chicken with air fryer sweet potatoes and simple salad (greens from the garden, carrots and cucumber).
I’ll make cornbread to go with this since I know the boys will eat that! I recently started making it with a little less sugar than it calls for + gluten-free all-purpose flour. Turns out great!
I use coconut cream instead of heavy cream since I don’t tolerate dairy. Buy canned coconut milk and use just the top thick part if you can’t find coconut cream.
The boys eat the plain pasta + a cheese stick and mini cucumbers.

Monday: Grilled balsamic chicken + white rice & broccolini (375°, drizzled in olive oil, salt & pepper).
Charles will eat all of this, but Thomas will only eat the rice, so I serve a different protein for him – usually a plain burger that we grill alongside the chicken or a spoonful of peanut butter. We always grill extra chicken and make extra rice & roasted veggies to use on salads or rice bowls for lunch.
