Happy Sunday! I love Sunday mornings because I usually make a yummy breakfast and I’m so excited to share a sweet potato waffle recipe with you that I recently made! Today’s breakfast included two eggs, toasted whole wheat flax bread, and a super sweet, organic peach. (By the way, that whole wheat flax bread makes awesome toast. It’s so good with a little butter.)
These eggs were laid yesterday afternoon and I bought them about an hour after the egg (chicken loving, blanket crocheting) lady gathered them. Yes, they taste amazing and I can really taste a difference from the ones purchased at the store. The poke & spread method really allows the good flavor of the egg to shine.
I recently had some amazing sweet potato pancakes and I also just got a Belgian waffle maker. Well, I looked at a bunch of recipes online to break that waffle maker in and couldn’t find exactly what I wanted so I improvised. And it turned out pretty dang tasty. I think next time I might even double the spices and experiment with using all wheat flour or perhaps spelt in place of the all-purpose flour. (UPDATE: I haven’t yet tried this with gluten-free flour, but I plan to!)
Makes about 2.5 large, round Belgian waffles
Suggested toppings: butter, coconut butter, almond butter, pure maple syrup, extra nuts, extra cinnamon.

Your breakfast looks like PERfection!!! I got rid of my waffle maker when we moved…so dumb!! It was sitting out and the donation truck came and I didn’t feel like packing ANYthing else, so off it went. LOL. At least it was a hand me down.

I am sure those eggs were amazing! I haven’t had eggs in so long but if they were just hatched and ethically raised chickens…um, yes please! That bread is something I can’t wait to make but I would love to see the scone recipe!
I got a mini waffle maker for Christmas 2 years ago but before I could test it out.. I kind of lost it. I’m sure it’s around somewhere.. it better turn up because I want to make a sweet potato waffle!

People keep posting DELICIOUS LOOKING WAFFLES lately! I know I couuuuld get a waffle maker (I see them for really cheap at Goodwill- I think people get them for wedding presents and just never use them) but I am kind of scared at my lack of counter space. But oh my God that looks so good!

I loved the movie Serendipity, but never had the actual frozen hot chocolate myself. I have been to NYC several times and have somehow missed out. It’s on the Bucket List.
I work at a Waldorf Astoria Hotel in South Florida, and we have a Serendipity in our hotel. This is very very bad and very very good….I get the frozen hot chocolates from my friends who work there all the time! They are so delicious!!
