You know how some people love making soup and it’s an easy, go-to meal for them? That’s not me. They always intimidate me for some reason. I can make salads without a recipe every day, all year long. (See my Instagram posts for proof.) But soup? Not so much. It’s not that I don’t love soup, it’s just that they always seem like a lot of work (which generally isn’t true). All that to say – these are soup recipes that I love, are easy and that I make over and over.
This soup is quick and easy and tastes better than my pictures depict ;), and it can easily be made vegetarian or vegan. Or if you aren’t veg, you can add some shredded roasted chicken to amp up the protein.
This soup was created during the great Winston-Salem 2016 Snowmageddon — which means we got about 3″ of snow and the city shut down. God bless the South. I love this soup because it tastes decadent, but there’s no cream in it. And, it packs in a lot of veggies!
Of all the soups in this post, this, to me, is the most quintessential fall soup. The ingredients are simple and it’s easy to make.
Lentil soup is such comfort food for me. One of my previous neighbors made the BEST lentil soup recipe and he didn’t have a recipe – “just made it like his grandmother made it with a little bit of everything.” I never quite got it to taste just like his, but this combo got pretty close.
This is probably my favorite soup recipe and it’s always a crowd pleaser. It’s my go-to for fall book club potlucks! Tip: If you’re taking it to a get together, keep the cooked pasta out of the soup until just before served so it doesn’t get mushy.
Fennel is something that used to intimate me, but it’s really easy to use and I love the flavor. Just make sure you rinse it well and you can’t mess it up!
