5 Quick & Healthy Weekday Breakfast Ideas

I have five breakfasts that I rotate through pretty steadily. Having go-to’s keep my mornings simple which is good since I typically work out in the AM and gotta head into the office and don’t have time for an elaborate breakfast (as much as I would love that). Plus, they are all pretty clean eats. Minus the toast that goes with my eggs, but a girl’s gotta live.

1. Gluten-free protein packed pancakes

from Fannetastic Food (these use bananas). This is what I’m having this morning!

3. Sweet oatmeal in some form

(steel cut oats, Ashley’s breakfast cookie, Gina’s cookie dough cereal or her breakfast cookie). These are some of my most popular/most pinned recipes!

Bruleed Banana Steel Cut Oats (here’s my steel cut oats tutorial if they’re new to you!). This is awesome but takes a little longer so it’s not a typical weekday breakfast.

4. Savory oatmeal 

I love oatmeal with an egg and hot sauce on top. This Savory Oatmeal with Eggs & Avocado is even better!

4. Over-medium eggs and toast

I usually use Udi’s gluten-free millet chia bread.

5. Green smoothie 

Right now my go-to is pretty simple: banana and/or blueberries, peanut butter, almond milk, protein powder, ice and spinach. Here are some other ideas if you need inspiration:

I always prep my smoothies the night before for a quick morning – put everything in the blender except the water or milk and toss it in the fridge. Then just add your liquid and ice in the morning and blend, and it’s ready to go in a few minutes.

You can prep my gluten-free pancakes, mine and Ashley’s breakfast cookies, and the cookie dough cereal the night before too. Just add the liquid in the morning. Gina’s breakfast cookie and steel cut oats are great make-ahead options too since they last a few days.

    1. Sweet oatmeal definitely helps keep me full until lunch and its one of my favourite breakfast items! I have yet to try savoury oatmeal though! It freaks me out a bit but I feel like I have to give it a shot!

    2. I’ve been on an overnight oats kick lately. They’re great since they can be made the night before, and there are tons of varieties. I’ve been making peanut butter banana and a carrot cake version. If I don’t have that, I usually grab a Greek yogurt and a Pamela’s Whenever bar. I get tired of sweets for breakfast, but I don’t eat meat and I’m not a big egg fan, so that makes it difficult!
